  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder

  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the finely diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a half teaspoon at a time, if the glaze is too thick.
  9. Remove the baked apple fritters from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool slightly more.
  10. Drizzle the vanilla glaze generously over the warm fritters before serving.
