  • 1/4 cup all-purpose flour
  • 1 cup lager beer (or non-alcoholic beer)
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/4 cup heavy cream

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking constantly until the mixture is smooth. Bring the mixture to a simmer and cook for 2 minutes, stirring until it thickens slightly.
  4. Remove the saucepan from the heat. Stir in the Dijon mustard, garlic powder, and cayenne pepper.
  5. Gradually add the shredded cheddar and Monterey Jack cheeses, a handful at a time, stirring until each addition is completely melted and smooth before adding more. Do not let the mixture boil after adding cheese.
  6. Stir in the heavy cream until the dip is fully combined and creamy.
  7. Transfer the dip to a serving bowl. Serve warm with soft pretzels, tortilla chips, or fresh vegetables.
