  • 2 lbs Yukon Gold potatoes, scrubbed and diced into 1-inch cubes
  • 3 tablespoons avocado oil or olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. Place the diced potatoes in a large bowl. If you want extra crispiness, soak the potatoes in cold water for 30 minutes, then drain them completely and pat them very dry with paper towels. This step removes surface starch.
  3. In the bowl, toss the dry potatoes with the avocado oil until evenly coated.
  4. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, dried rosemary, salt, and pepper.
  5. Sprinkle the seasoning mixture over the potatoes and toss again until every piece is well coated.
  6. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure they roast instead of steam.
  7. Roast for 20 minutes. Remove the pan and carefully flip the potatoes using a spatula.
  8. Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are deeply golden brown and crispy on the edges.
  9. Serve immediately as a delicious side dish for your eggs or bacon.
