  • 1 (28 ounce) can whole peeled tomatoes (San Marzano recommended)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1/2 teaspoon sugar (optional, for balancing acidity)

Instructions

  1. Drain the whole peeled tomatoes, reserving the liquid. Place the whole tomatoes into a bowl.
  2. Crush the tomatoes by hand or pulse briefly in a food processor until you reach your desired consistency. Do not over-process; a slightly chunky texture is best for authentic flavor.
  3. Stir in the minced garlic, dried oregano, dried basil, salt, black pepper, and olive oil into the crushed tomatoes.
  4. If the sauce tastes too acidic, stir in the optional sugar. If the sauce is too thick, add a tablespoon or two of the reserved tomato liquid until you reach a spreadable consistency.
  5. Taste the sauce and adjust salt and pepper as needed. This is your simple pizza sauce from scratch.
  6. Use immediately on your pizza dough or cover and refrigerate for up to one week. This makes a great make ahead pizza sauce.

  • For an authentic Neapolitan pizza sauce flavor, use high-quality canned San Marzano tomatoes.
