  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup finely chopped celery
  • 1/2 cup shredded iceberg or romaine lettuce
  • 1/4 cup finely chopped red onion (optional)
  • 1/2 cup mayonnaise (or Greek yogurt for a healthier option)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper to taste

Instructions

  1. Cook the bacon until crisp. Drain on paper towels and crumble once cooled. Set aside.
  2. In a large bowl, combine the shredded chicken, halved tomatoes, chopped celery, lettuce, and red onion (if using).
  3. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, and apple cider vinegar until smooth. This creates your creamy dressing base.
