  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup uncooked long-grain white rice
  • 1 cup chicken broth
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup milk
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, uncooked rice, chicken broth, 3/4 cup of the shredded cheddar cheese, milk, onion powder, and black pepper. Mix all ingredients until they are fully incorporated.
  3. Spread the chicken and rice mixture evenly into the prepared baking dish.
  4. Cover the dish tightly with aluminum foil.
  5. Bake for 45 minutes.
  6. Remove the foil. Sprinkle the remaining 1/4 cup of cheddar cheese (and breadcrumbs, if using) over the top.
  7. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
  8. Let the cheesy chicken and rice casserole rest for 5 minutes before you serve it.

Notes

  • If you use leftover cooked chicken, this recipe comes together very quickly.
  • For added flavor and color, stir in 1 cup of frozen broccoli florets with the other ingredients before baking.
  • You can substitute the cream of chicken soup with cream of mushroom soup if you prefer.
