Make this comforting, low-carb chicken cauliflower rice casserole for a satisfying weeknight dinner. It uses riced cauliflower instead of rice for a keto-friendly, gluten-free meal that is quick to prepare.

  • 3 cups cooked chicken breast, shredded or diced
  • 4 cups cauliflower rice (frozen or fresh)
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets, small pieces
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Melt the butter in a large skillet over medium heat. Add the diced onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the cauliflower rice and broccoli florets to the skillet. Cook, stirring occasionally, until the cauliflower rice has softened slightly, about 5 to 7 minutes. If using frozen cauliflower rice, cook until most of the moisture has evaporated.
  4. In a large bowl, combine the softened cream cheese, heavy cream, Italian seasoning, salt, and pepper. Whisk until the mixture is smooth and creamy.
  5. Fold the cooked chicken, the cooked vegetable/cauliflower rice mixture, and 3/4 cup of the cheddar cheese into the cream cheese sauce until everything is evenly coated.
  6. Transfer the mixture to the prepared baking dish. Spread it into an even layer.
  7. Top the casserole evenly with the remaining 1/4 cup cheddar cheese and all of the mozzarella cheese.
  8. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly golden brown.
  9. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For an even quicker meal, use pre-cooked rotisserie chicken.
  • If you prefer a lighter sauce, substitute the cream cheese with an equal amount of plain Greek yogurt, though the texture will be slightly less rich.
  • This recipe is naturally gluten free.
