Make these savory, better-than-takeout chicken lettuce wraps at home. This easy ground chicken recipe is quick to prepare and makes a fantastic low-carb dinner or appetizer.

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1/2 cup finely chopped water chestnuts
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup finely chopped green onions, white parts only
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 head butter lettuce, separated into leaves for wrapping
  • Optional toppings: extra green onions (green parts), chopped peanuts, Sriracha

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the water chestnuts, mushrooms, and white parts of the green onions to the skillet. Cook for 2 minutes until the vegetables begin to soften slightly.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, brown sugar, sesame oil, and black pepper.
  6. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
  7. Remove the skillet from the heat.
  8. Arrange the butter lettuce leaves on a serving platter. Spoon the cooked chicken mixture into the lettuce cups.
  9. Garnish with the reserved green onions and peanuts, if using. Serve immediately.

  • For a low-carb chicken wraps option, skip the brown sugar or substitute it with a zero-calorie sweetener.
  • You can substitute ground turkey for ground chicken if you prefer.
