Make this ultra-moist Christmas Jello Poke Cake for your holiday gatherings. This easy recipe uses simple ingredients to create vibrant red and green layers, making it a perfect, no-fuss festive dessert centerpiece.

Ingredients

Scale
  • 1 box (15.25 ounces) white cake mix
  • Ingredients listed on cake mix box (eggs, oil, water)
  • 3 ounces red gelatin (like Jell-O)
  • 3 ounces green gelatin (like Jell-O)
  • 1 cup boiling water (for each gelatin flavor)
  • 1 cup cold water (for each gelatin flavor)
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1/2 cup white chocolate chips (optional, for garnish)
  • Holiday sprinkles (for garnish)

Instructions

  1. Prepare the cake: Preheat your oven to the temperature directed on the cake mix box. Grease and flour a 9×13 inch baking pan. Prepare the white cake mix according to the package directions. Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan.
  2. Poke the cake: Once the cake is cool, use the handle of a wooden spoon or a large fork to poke holes all over the surface of the cake. Make the holes about 1 inch apart, going all the way through to the bottom of the pan.
  3. Prepare the gelatin: In separate bowls, dissolve the red gelatin in 1 cup of boiling water for each, stirring until fully dissolved. Then, stir in 1 cup of cold water for each.
  4. Pour the gelatin: Carefully pour the red gelatin mixture evenly over half of the poked cake surface. Pour the green gelatin mixture evenly over the remaining half of the poked cake surface.
  5. Chill: Refrigerate the cake for at least 4 hours, or until the gelatin is completely set.
  6. Frost and serve: Once the gelatin is firm, spread the thawed whipped topping evenly over the entire surface of the cake. Sprinkle with white chocolate chips and holiday sprinkles before slicing and serving.

Notes

  • For the best color contrast, ensure the cake is completely cool before pouring the liquid gelatin over it.
  • You can substitute the whipped topping with cream cheese frosting if you prefer a richer topping.
  • This cake tastes best when served cold, so keep it refrigerated until you are ready to serve it at your holiday potluck.
