Easy Weeknight Dorito Casserole

Make this simple, cheesy Dorito Casserole for a quick comfort food dinner that your family will love. It is a great potluck favorite.

  • 1 pound ground beef or ground turkey
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup water
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.25 ounces) Nacho Cheese flavored Doritos, lightly crushed
  • 1 cup sour cream (for topping, optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef or turkey and onion in a large skillet over medium heat until the meat is browned. Drain off any excess grease.
  3. Stir the cream of chicken soup, Ro-Tel, black beans, water, and taco seasoning into the skillet with the meat mixture. Bring the mixture to a simmer.
  4. Remove the skillet from the heat. Stir in 1.5 cups of the shredded cheddar cheese.
  5. Spread half of the crushed Doritos in an even layer on the bottom of the prepared baking dish.
  6. Pour the meat and sauce mixture evenly over the layer of chips.
  7. Sprinkle the remaining 0.5 cup of cheddar cheese over the top of the mixture.
  8. Bake for 20 minutes, or until the casserole is hot and bubbly.
  9. Remove from the oven. Top the casserole evenly with the remaining crushed Doritos. Return to the oven for 5 more minutes to warm the topping slightly, or leave them off until serving for maximum crunch.
  10. Let the Dorito Casserole rest for 5 minutes before slicing and serving. Top individual servings with sour cream, if desired.

Notes

  • For a crispier topping, reserve all the Doritos and only add them during the last 5 minutes of baking.
  • You can substitute ground turkey for ground beef for a slightly leaner option.
  • Prepare the base mixture ahead of time and store it in the refrigerator for up to 24 hours before assembling and baking.
