Make flavorful, juicy shredded chicken tacos fast using this simple stovetop method. This recipe delivers authentic Mexican flavor perfect for busy weeknights or family taco night.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 12 small corn or flour tortillas
  • Toppings: chopped cilantro, diced white onion, lime wedges, salsa

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the chicken breasts, taco seasoning, chicken broth, and water to the skillet. Bring the liquid to a simmer.
  4. Reduce the heat to low, cover the skillet, and let the chicken cook for 15 to 20 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken breasts from the skillet and place them on a cutting board. Use two forks to shred the chicken completely.
  6. Return the shredded chicken to the skillet. Stir well to coat the chicken thoroughly with the cooking liquid and seasoning. Cook uncovered for 2 to 3 minutes to allow the sauce to thicken slightly.
  7. Warm the tortillas according to package directions (stovetop or microwave).
  8. Assemble your chicken tacos by filling each warm tortilla with the seasoned shredded chicken. Top with cilantro, onion, and a squeeze of fresh lime juice. Serve immediately with salsa.

Notes

  • For extra flavor, use half chicken broth and half water when simmering the chicken.
  • You can prepare the chicken filling ahead of time and store it in the refrigerator for up to 3 days for easy meal prep.
  • If you prefer a spicier taco, add 1/4 teaspoon of cayenne pepper or a dash of hot sauce to the simmering liquid.
