Ingredients
Scale
10 ounces chow mein noodles (about 6 cups)
2 cups butterscotch chips
¾ cup creamy peanut butter
Instructions
Line a baking sheet with parchment paper.
In a large, microwave-safe bowl, combine the butterscotch chips and peanut butter.
Microwave on medium power in 30-second intervals, stirring well after each interval, until the mixture is completely smooth and melted. This usually takes 60 to 90 seconds total.
Add the chow mein noodles to the melted mixture. Stir gently until the noodles are fully coated.
Drop spoonfuls of the mixture onto the prepared baking sheet. You can make them small or large depending on your preference.
Let the cookies set at room temperature for about 30 minutes, or place them in the refrigerator for 10 minutes to speed up the process.
Serve these crunchy sweet snacks once they are firm.
Notes
For a variation, substitute half the butterscotch chips with semi-sweet chocolate chips to make chocolate haystack cookies.
If you prefer a different crunch, substitute pretzels for the chow mein noodles.
These are excellent for holiday cookie trays because they require no oven time.
