Make a perfectly moist and tender turkey breast quickly using your Instant Pot. This recipe is ideal for weeknight dinners or stress-free holiday meals and includes simple instructions for making gravy from the pot drippings.

  • 1 (3-4 lb) boneless turkey breast, skin on or off
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1 tablespoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cold water (for gravy)
  • 1 tablespoon cornstarch (for gravy)

Instructions

  1. In a small bowl, mix together the rosemary, thyme, garlic powder, onion powder, salt, and pepper to create the herb rub.
  2. Rub the seasoning mixture evenly over the entire turkey breast.
  3. Pour 1 cup of chicken broth or water into the inner pot of your Instant Pot. Place the trivet inside.
  4. Carefully place the seasoned turkey breast on top of the trivet.
  5. Secure the lid on the Instant Pot and set the valve to the sealing position.
  6. Cook on High Pressure for 55 minutes for a 3-4 lb turkey breast. (Adjust time based on weight: allow 12-15 minutes per pound).
  7. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to the venting position to release any remaining pressure.
  8. Remove the turkey breast from the pot and tent it loosely with foil. Let it rest for 10 minutes.
  9. To make the gravy, carefully pour the liquid from the Instant Pot into a fat separator or measuring cup, reserving the drippings. You should have about 1.5 cups of liquid.
  10. In a small bowl, whisk together the 1/2 cup of cold water and 1 tablespoon of cornstarch until smooth.
  11. Pour the reserved cooking liquid into the Instant Pot inner pot. Set the pot to Sauté mode (Normal). Bring the liquid to a simmer.
  12. Slowly whisk the cornstarch slurry into the simmering liquid. Continue to whisk until the gravy thickens, about 2-3 minutes.
  13. Slice the turkey breast and serve immediately with the homemade gravy.

Notes

  • For an even juicier turkey, you can rub the breast with softened butter mixed with the herbs before seasoning.
  • If your turkey breast is frozen, add 10-15 minutes to the total pressure cooking time.
  • This recipe works well for a boneless turkey breast roast.
