Make this simple, flavorful one-pan honey garlic chicken and broccoli for a quick dinner that requires minimal cleanup. This recipe delivers sticky, sweet, and savory tastes perfect for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Sesame seeds, for garnish
  • Cooked rice or noodles, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, salt, and pepper until coated. Spread the chicken in a single layer on one half of the prepared baking sheet.
  3. In the same bowl, toss the broccoli florets with the remaining 1 tablespoon of olive oil, salt, and pepper. Spread the broccoli on the other half of the baking sheet, keeping it separate from the chicken.
  4. Bake for 12 minutes.
  5. While the chicken and broccoli bake, prepare the sauce. In a small saucepan, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Bring the mixture to a simmer over medium heat.
  6. Whisk the cornstarch slurry into the simmering sauce. Continue to cook, stirring constantly, until the sauce thickens, about 1 minute. Remove from heat.
  7. Remove the baking sheet from the oven. Drizzle half of the honey garlic sauce over the chicken and the other half over the broccoli. Gently toss the chicken and broccoli on the pan to coat them evenly with the sauce.
  8. Return the pan to the oven and bake for another 8 to 10 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the broccoli is tender-crisp.
  9. Remove from the oven. Garnish with sesame seeds. Serve immediately over cooked rice or noodles.

Notes

  • For a low carb chicken broccoli dinner, skip the rice or noodles and serve the dish as is.
  • If you prefer a sheet pan chicken and broccoli without the sweetness, substitute the honey with extra soy sauce and a teaspoon of brown sugar for a savory glaze.
  • This recipe uses chicken breast, but you can substitute boneless, skinless chicken thighs if you prefer darker meat.
