Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into long, thin ribbons. Stop peeling when you reach the core. Discard the cores.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, sesame oil, honey (or maple syrup), and red pepper flakes until fully combined. This is your lime sesame carrot salad dressing.
  3. Place the carrot ribbons in a medium mixing bowl.
  4. Pour the dressing over the carrot ribbons. Toss gently with tongs until all the ribbons are evenly coated.
