Instructions

  1. Drain the ricotta cheese in a fine-mesh sieve set over a bowl for at least 15 minutes to remove excess liquid. This step helps achieve a thick, creamy texture.
  2. Place the drained ricotta cheese, olive oil, salt, and pepper into the bowl of a food processor.
  3. Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy.
  4. Transfer the whipped ricotta dip to a shallow serving bowl. Use the back of a spoon to create a slight well or swirl on top.
  5. Drizzle the honey evenly over the surface of the dip. If you are using regular honey, warm it slightly so it drizzles easily.
  6. Sprinkle the toasted walnuts over the honey.
  7. Garnish with a few fresh thyme leaves, if desired.
